Strawberry-Mint Lemonade

Ingredients

Scale
  • 1 cup fresh lemon juice (about 5 lemons)
  • 3 cups water (add more if you prefer less sweet)
  • 1 pound (or 3 cups) of fresh or frozen strawberries
  • 1.5 cups mint simple syrup
  • Ice, sliced strawberries, mint leaves, sliced lemons for garnish.

For the Mint Simple Syrup:

  • 1 cup sugar
  • 1 cup water
  • 1 bunch fresh mint

Instructions

For the Simple Syrup:

  1. In a small saucepan, combine sugar, water, and mint stems. Place over medium heat, and cook, stirring occasionally, until sugar is dissolved.
  2. Remove from heat; let cool. Remove mint. 

For the Lemonade:

  1. Puree strawberries and lemon juice in food processor or blender. Pour through a fine sieve into a bowl, discard pulp. Transfer to large pitcher.
  2. Mix together puree, water, syrup, ice and garnishes.
